You’ll have to take my word on how amazing this pasta salad is, because there’s no pic. Nope, nothin. We ate it too quickly and a picture was an afterthought. So……trust me.

I know you’re past the point of no picture, and want to know the history of the name. Well, my friends used to go to a LOT of horseshows, and this is a copycat pasta salad from one they used to buy at Wal Mart. And why would you name it horseshow? Because it was easy to pop in the fridge in the trailer for the weekend meals. Just like I called it “trailer bacon” – you know, the automatic bacon that comes in the box/package that’s precooked. Easy to pop in a horse trailer microwave. I think you’re feelin it now, so let’s get to the recipe. Yes, the directions are a little flexible, but make to your liking, taste along the journey, and you’ll love it!

JORDAN’S HORSESHOW PASTA SALAD

  • 16 oz. penne or bowtie pasta
  • 8oz+ shredded mild cheddar cheese
  • Black olives
  • Cherry tomatoes
  • Halved pepperoni slices
  • Mayo (couple dollops and not miracle whip)
  • Lots of ranch dressing
  • To taste: lemon juice, garlic salt, pepper, cilantro

Boil & chill pasta. Add olives, pepperoni, tomatoes. Add and mix the rest to creamy deliciousness and adjust seasoning as needed. Cover and chill.
